Rowan, who appeared in the Great British Bake Off 2020, celebrated National Tree Week by sharing his top tips on creating beautiful leaf decorations from tempered chocolate and marzipan

If you would like to bake along, the ingredients you will need are:

For the tempered chocolate leaves

  • At least 70% cocoa solids chocolate
  • A ‘bain-marie’ (a bowl of hot water over which you place your bowl of chocolate to melt it)
  • A few leaves selected from trees to serve as a mould for your tempered chocolate (Rowan uses holly and bay leaves – but choose whichever you like!)

For the marzipan

  • Ground almonds
  • Egg whites
  • Soft brown sugar
  • (Optional) a little Cointreau
  • A little icing sugar
  • A rolling pin
