Fantastic baker Rowan Williams, who appeared in the Great British Bake Off 2020, celebrates National Tree Week by sharing his top tips on creating beautiful leaf decorations from tempered chocolate and marzipan

What you will need to bake along:

For the tempered chocolate leaves

  • At least 70% cocoa solids chocolate
  • A ‘bain-marie’ (a bowl of hot water over which you place your bowl of chocolate to melt it)
  • A few leaves selected from trees to serve as a mould for your tempered chocolate (Rowan uses holly and bay leaves – but choose whichever you like!)

For the marzipan

  • Ground almonds
  • Egg whites
  • Soft brown sugar
  • (Optional) a little Cointreau
  • A little icing sugar
  • A rolling pin
